Banana pancakes this morning.

Begin with a cup or so (depends on how many you want to feed) of a complete pancake mix (house brands are fine, it is just flour & basics anyway). A cup is usually plenty for 2-3 people, or 2 people + 2 dogs! Add to the dry mix: a good dash of cinnamon, nutmeg, a pinch of salt, a healthy squirt of vanilla extract, and a few ounces of apple sauce. Add water gradually while stirring, until the batter is not too thick. Instead of water, you could also add carbonated water (for a liter, fluffier pancake); or milk for a heavier hotcake. I often do a 50/50 of water & apple juice. Now add one or two bananas, diced. Cook on griddle at 250-275. Add a lite drizzle of oil, if the griddle becomes dry -- but don't overdo it. We are not sauteing the pancakes. Serve with some sliced sausage or bacon strips.
