Welcome BBQ enthusiasts and foodies!

Although our website is officially all about Production Sound for Film and Video, all of us need a little diversion now and then. During the summer of 2018, Fred decided to get serious about his BBQ and began learning the culinary art of competition grade, smoked BBQ. This section of our site is where we will share announcements, recipes, and cooking tips for those of you who are interested in succulent, slow smoked Texas style fine BBQ.

Our cooking team is officially registered with KCBS as Sound Q. KCBS (Kansas City BBQ Society) is the main sanctioning body for competition BBQ. But we bet that you already knew that, if you are a fan of the popular TV series, Barbecue Pitmasters! We are also members of the Nevada BBQ Association, which is a very friendly regional group that meets monthly in the Las Vegas area.

Competition BBQ is a serious sport that takes backyard cooking to a whole new level. These teams often compete for 10 to 40 thousand dollars of prize money, in addition to trophies and bragging rights, at hundreds of events held all over the country. In the end, it is all about 6 bites of meat served to a table of 6 (certified) judges that score on the basis of presentation/appearance, tenderness, and taste. Many of these pitmasters are professionals and operate their own restaurants or catering companies. But many are just amateurs out to see how well they compare. Judging is done blind (turn-in boxes only have a random numbered tag), so none of the judges at each table of 6 know whose food they are scoring. Sometimes David beats Goliath!

To be honest, it will be many months before we are ready to compete on our own. Not only is there so much to learn and practice in terms of culinary technique, and flavor profiles to develop (we prefer coming up with our own sauces & rubs rather than just buying them off the shelf) -- but this game is expensive. It takes a ton of specialized equipment.

Not only do you need a good pit (aka smoker), but a complete portable kitchen encampment. Coolers, hot boxes, a pantry full of ingredients, prep tables, cutlery, injectors, pop-up tenting. And a trailer to haul it all in. Add in the cost of expendables, such as woods for the pit, and some high quality raw meats.

So for the meantime, Sound Q will "intern" with some of the more established teams. However, we will continue to smoke Q for smaller community groups, such as the Film Faculty at Calif State Univ Northridge, and the Panormama Sportsmans Club.
